My Dad always ate eggplant when we were growing up. Deep fried with lots of salt. We always passed on that one. It’s really amazing how your taste buds change as you mature.

  • 3 large eggplant
  • 1 lb. ground beef
  • 1 onion chopped
  • 1 cup bread crumbs
  • ½ cup Parmesan cheese
  • 4 tablespoons Tuscan, or Original or Asian Ginger Ellbee’s
  • 3 eggs
  • 2 tomatoes, sliced thin for garnish

  1. Slice eggplant in half lengthwise. Scoop out eggplant and put in pot of boiling saltwater for 15 minutes, drain, cool. Save the shells to stuff.
  2. While that is cooking, brown meat, drain. Add onion and Ellbee’s, saute’ 5 minutes. Cool
  3. In large bowl whip eggs until blended, add remaining ingredients, and meat. Mix well.
  4. Fill each shell with mixture. Top with garnish. Bake 325* for 25 minutes. Serve with fresh cantaloupe. If you’ve never thought you would like eggplant, you’ll be surprised just how delicious it is. Enjoy
