Ingredients
  • 2 lbs. chicken (5 chicken breast)
  • 2 T Ellbee's Garlic Chili Lime or Zesty
  • 1 onion
  • 1 jalapeno, sliced and de-seeded

  • 2 cans black beans, drained
  • 4 cups shredded cheddar cheese
  • 1 can re-fried beans
  • 2 cans enchilada sauce
  • 12 flour tortillas
  • Verde' sauce (optional)
Instructions
  1. Place chicken in crock pot or pressure cooker along with Ellbee's Garlic Chili Lime, onion, and jalapeno. Cook until meat until it pulls apart. Cool so you can handle meat.
  2. Assembly:
  3. pre-heat oven to 350* take 9x13 pan and pour some of the enchilada sauce in the bottom.
  4. Take tortillas shell and add chicken, black beans, and cheese, then take some of the re-fried beans and make a glue line on end of tortilla, and roll, place shell in pan seam side down, Continue to assemble shells until pan is full. Top with remaining enchilada sauce, cheese and Verde' sauce. Place in oven and bake for 30 minutes.
