  • T. onion, chopped
  • 2 cups fresh spinach
  • 1 T. water
  • 2 eggs
  1. On medium high heat In non stick skillet, put onion, and water and spinach. Place lid on for 1 minute until spinach is wilted. Stir. Crack 2 eggs directly on top of spinach mixture, salt and pepper lightly and place lid back on. Turn heat down to medium and let steam for 3 minutes. Remove from heat and plate. Serve with 5 sliced strawberries. Amazing, fast to create and a great way to start your day and get your metabolism working.
